It’s that time of year again! A time when everyone comes together in agreement – Pumpkin Spice flavored anything is amazing! Coffee, cupcakes, donuts, you name it! The ‘it’ flavor during fall is Pumpkin Spice. Bring this beloved flavor home with these cozy treats!

Spiced Pumpkin Bread

This delicious baked treat is just what you need with a cup of coffee on a cool day! Opt for the suggested additions of raisins and walnuts, or go more festive with cranberries and pecans. This bread is filled with the flavors of fall.

  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground nutmeg
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp salt
  • 3 cups granulated sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 can (16 ounces)of  pumpkin puree
  • Optional: 1 cup coarsely chopped raisins or cranberries
  • 1 cup chopped walnuts or pecans

Preheat the oven to 350 degrees and grease and flour a 10-inch Bundt pan. In a medium bowl combine the flour, baking powder, baking soda, salt, and spices. Whisk to combine. In a separate large mixing bowl, combine the sugar, vegetable oil, and eggs; beat on low speed with an electric mixer or whisk until well combined. Stir pumpkin into the egg mixture. Gradually add sifted flour mixture to the pumpkin mixture, stirring well after each addition. Fold in nuts, raisins, or cranberries if using.

Spoon the batter into the prepared Bundt cake pan. Bake for about 1 hour and 15 to 20 minutes, or until a chopstick inserted in center comes out clean. Let the bread cool in the pan for about 10 minutes before removing and cool completely before slicing.

Pumpkin Whipped Cream

Adding pumpkin whipped cream to your fall baking projects ups the ante and adds an extra touch of deliciousness to all of your desserts. Plus, it’s super simple to make.

  • 1 cup heavy whipping cream
  • 2 tbsp pumpkin puree
  • 1 tbsp + 1 tsp sugar
  • 1 tsp vanilla extract
  • 1/4 tsp pumpkin pie spice

Chill a high-walled medium-sized bowl, or the bowl of your stand mixer, and the whisk attachment for your mixer in the freezer for 10 minutes. Remove the bowl and whisk, and add all of the ingredients to the bowl. Whip using a stand mixer or hand mixer until you reach stiff peaks, or your desired consistency, about three minutes. Pro tip: If using a hand mixer, start on a low speed and gradually increase your speed over the course of about a minute to prevent messy splattering.
